  21. Bechamel sauce
  22. 4 tablespoons butter
  23. 3/4 cup all-purpose flour
  24. To taste salt
  25. To taste ground nutmeg for sprinkling on top before baking
  26. 1 quart milk
  27. 3 large eggs
  28. 2 cups parmesan cheese grated

Steps to make Pastitsio

  1. Preheat oven 400°Fahrenheit. Boil the pasta in the water with salt and olive oil. When done allow the pasta to cool.
  2. Add cheese to the pasta. Mix the eggs with the pasta.
  3. Add to a 9×13 pan, or a deep pan or pot. Add the pasta mixed with egg and cheese.
  4. Cook the meat and sauce, drain the meat when browned. Add the sauce. Stir in the tomato paste. When it's done cover allow to rest 15 minutes then remove bay leaves and discard.
  5. Add sauce to the top of pasta. Spread it out to cover all the pasta.
  6. Beat the eggs. Heat the milk a little not boiling, but hot. Stir in the cheese. Melt the butter in another pan. Add the salt, pepper, and flour, and stir well allow to cook but don't let it turn brown.
  7. Add in the milk whisking constantly, till flour butter mixture till smooth. Take some of the sauce mixture and add to the eggs gradually till the sauce is mixed. Add the egg mixture to the rest of the sauce. Keep whisking for 2 minutes the sauce should be thick and creamy.
  8. Add the bechamel sauce smooth it out. Sprinkle nutmeg over the top of bechamel sauce. Put into oven for about an hour until golden brown. Take out of oven and allow to rest 15 minutes. You can cut into square pieces or pie shape if in a pot, and serve or refrigerate for the next day. I hope you enjoy!!!
