  10. For topping: 1/2 cup ketchup, 2 tsp brown sugar, 1tsp yellow mustard

Steps to make Moist Meatloaf

  1. Preheat oven to 350*.
  2. Sauté onions & bell pepper in 1 tbsp olive oil, until softened. About 5 minutes. Remove from heat and seat aside.
  3. Combine eggs, onion mixture, cheese, crackers, milk, salt & pepper.
  4. Stir in ground beef just until blended.
  5. Form a loaf and place in loaf pan.
  6. Bake for 30 minutes. Remove from oven and spread topping over entire loaf. Return to oven and cook for 30-40 minutes more or until internal temperature reaches 160*.
  7. Remove from oven and let rest for 15 minutes before slicing. Slicing right out of the oven will cause it to fall apart.
  8. Serve with some mashed potatoes. Yum!
