This recipe is a typical popular Chilean dish. It is done more during the summer time in which is the corn season. It consists of ground beef, chicken, a corn topping and then baked. This recipe was made in New York with fresh American corn. The difference is that Chilean corn, after being ground, cooks and thickens when cooked because it contains a lot of starch. It is also not sweet so some sugar is added. The American corn is sweeter and does not need to add sugar. It doesn't have that much starch either, that's why I add a few tablespoons of cornmeal or polenta to it.

  21. 12 corns. Cut in kennels
  22. 1 tsp. Salt
  23. 5 basil leaves
  24. 1 small diced onion
  25. 1 clove garlic, minced
  26. 1 tbsp. oil
  27. other ingredients
  28. 4 hard-boiled eggs, cut into 4 wedges each
  29. 24 pitted olives
  30. 3 tbsp. Butter
  31. 1/2 tsp. Paprika

  1. METHOD
    Cut the chicken legs at the joint, separating the thighs from the drums.
    Separate the wings from the chicken.
    Cut the chicken breast into 4 pieces.
  2. In a bowl, mix the spices and season the chicken pieces.
    Heat 3 tablespoons of oil in a frying pan and brown the chicken pieces.
    Add and brown the onion with the garlic.
    Add the wine, allowing half to evaporate, cover and finish cooking over low heat for about 15 minutes.
  3. METHOD BEEF PREPARATION
    Heat a frying pan with a bit of oil and fry the garlic and onions together.
    Add and cook the ground beef.
    Add the rest of the ingredients and cook a couple more minutes.
  4. METHOD FOR CORN PREPARATION
    Pure the corn with basil and salt in a blender or food processor.
    In a frying pan, heat a tablespoon of oil and fry the onion with the garlic.
    Add and cook the ground corn pure until it boils .
    Add the cornmeal and stir well to thicken, set aside.
  5. In a small frying pan, melt the butter and add paprika.
  6. ASSEMBLING THE BAKING DISHES
    Preheat the oven to 204 ͦ C. / 400 ͦ F.
    Divide the meat and the chicken into the individual baking dishes.
    Put 2 eggs wedges and 3 olives in each dish.
  7. Cover with the corn pure.
    With a brush, paint over the top with the melted butter and paprika.
    Put the baking dishes to bake for about 30 minutes. Turn on the broiler to brown a bit the top.
    Serve immediately.
